Blog Recap – Cupcakes

Today I’m going to recap some of the cupcakes that I’ve made over the past two years. I’ve made a LOT of cupcakes and have enjoyed sharing them with friends, family, and coworkers.

Cookies and Cream Cupcakes – posted on Sept 12, 2007 – These were one of the first cupcakes I posted in this blog. And I’ve gone back to this recipe multiple times. I like to leave the Oreo chunks fairly large in the cupcake batter. I also like to put half of the Oreo in the bottom of the cupcake liner prior to adding the batter. These are one of Hubby’s all time favorite cupcakes.

Cranberry Walnut Cupcakes – posted on Nov 29, 2007 – This cupcake was one of the first times I started playing around with cupcake flavors. They are a great combination of fall flavors.

Raspberry Filled Cupcakes – posted on March 14, 2008 – I love swiss meringue buttercream, and I think these cupcakes were the first time I made it. It’s amazing on almost any cupcake. This was also about the time when I started to fall in love with filling cupcakes.

Cookie Dough Chocolate Ice Cream Cupcakes – posted on May 31, 2008 – Ice cream and cupcakes go perfectly together. These cupcakes were awesome. I think cream cheese frosting is the best frosting for ice cream cupcakes.

Blueberry Lemon Basil Cupcakes – posted on July 30, 2008 – These cupcakes were great. Some people think basil shouldn’t be found in cupcakes, but I beg to differ. It’s a great flavor enhancer. This recipe helped me to win a recipe contest on www.thenest.com from which I received two free cookbooks!

Chocolate Peppermint Cupcakes – posted on Dec 26, 2008 – I was told these cupcakes were “the best cupcakes I’ve ever had” by one of my friends. The filling inside is amazing. And as always, I love swiss meringue buttercream.

Vegan Chocolate Banana Caramel Cupcakes – posted on Feb 12, 2009 – The tofu mousse that was used as a frosting on these cupcakes is great. And I love this vegan chocolate cupcake recipe. They’re very moist.

Creme Brulee Cupcakes – posted on April 16, 2009 – Hubby love creme brulee, so it’s no surprise that he loved the creme brulee cupcakes. With the caramelized sugar on top, it was a great excuse to my kitchen torch.

Chocolate Peanut Butter Cupcakes – posted on July 16, 2009 – Peanut butter and chocolate is such a great flavor combo. If you’re looking for a peanut butter frosting recipe, definitely try this one out.

Harry Potter Cupcakes – posted on Aug 4, 2009 – I think I like Harry Potter as much as I like cupcakes. So naturally, I combined my two loves when we went to see the Half Blooded Prince in IMAX with some friends. I love being able to use some creativity in decorating cupcakes.

    I can’t decide which of those last 3 to try first…but I think I’m going with the Snickerdoodle Blondies. My husband and I are both nuts for snickerdoodles!

    Ok, I’ll take one of each please! And could you please share your secret on cutting those perfect bars?! Mine always have crumbs coming off the edge, or part of it sticks to the knife and leaves a big hole in the bar!

    Melissa – I always chill the brownies completely. Usually in the fridge. I find that helps. I also use a pastry cutter to cut them.

    Thank you so much! I am even more impressed knowing that you can wait until these goodies are completely chilled before cutting into them. 🙂 I think that scraper needs to go on my Christmas list!
