French Toast Bread Pudding and a Giveaway

I’m a BIG fan of French toast. It’s just so comforting and delicious. Imagine taking the flavors of French toast and putting them into another comfort food – bread pudding. That’s what this recipe does.

I had the opportunity to go to an event a Panera a couple weeks ago. I got to taste their new steak sandwich and salad. Both were really good. I also had the opportunity to meeet some great people who work at Panera and Childrens Hospital Boston. You might be wondering how the two are related. Well, right now, select Boston area Panera cafes are donating a percentage of the proceeds from the Easter egg cookie sales to Children’s Hospital Boston.

After spending the evening with the folks at Panera, I decided I wanted to try one of their recipes found on myPanera.com. I grabbed a couple French toast bagels to make this bread pudding.

The lovely people at Panera have offered a giveaway so you can head into Panera and get your favorite lunch or try the new steak sandwich. To win the $15 gift certificate, just leave a comment before 12 noon (EST) on Wednesday April 6th letting me know what your go-to Panera order is. I always get the Pick-2 with the Turkey Bravo sandwich and the Ceasar salad. It always hits the spot.

French Toast Bread Pudding

Yield: 6-8

Ingredients:

2 Panera Bread French Toast Bagels, cut into bite-size pieces
3/4 cup raisins (optional)
4 eggs
3/4 cup brown sugar
1 tsp vanilla
1 tsp ground cinnamon
1/2 tsp freshly grated nutmeg
1/2 tsp salt
2 cups milk
1 cup half-and-half
Grated zest of a 1/2 orange

Directions:

Preheat oven to 350ΒΊF. Coat a 2-quart baking dish or eight 6- to 8-ounce ramekins with cooking spray and set the dish or ramekins on a rimmed baking sheet. Put bagel pieces in baking dish or ramekins in an even layer. If using raisins, scatter on top.

In a large bowl, whisk together eggs, brown sugar, vanilla, cinnamon, nutmeg, and salt until blended. Whisk in milk, half-and-half, and orange zest.

Pour egg mixture over bagel pieces, then press down with a spatula until completely coated. Let stand at room temperature for 30 minutes, pressing down now and then to saturate bagel pieces.

Put baking sheet with the baking dish or ramekins in the oven, then pour very hot tap water into the baking sheet to about 1/4 inch up the sides of the baking dish or ramekins.

Bake until pudding is just set in the center, 60 to 75 minutes for the baking dish or 35 to 45 minutes for ramekins. Remove and let cool until warm to the touch.

Great giveaway, Jen! I don’t know that I could pick a single favorite ethnic food, and I’m not sure I can positively say that I’ve made it totally authentic at home. However I certainly do incorporate my favorite ethnic flavors into much of my cooking. On my list of things to try? Sushi (I got my first lesson last week, so I can’t wait to experiment more at home!) and, like you, Indian food. Ironically, I found a drool-worthy recipe last week that we are having tonight, and I can’t wait.

My favorite ethnic dish is eggs scrambled with tomatoes. It’s the cheapest, most down-home Taiwanese comfort dish there is. My mom has made it for me all my life.

I’m so unoriginal. My favorite is Italian. I mean, it’s often pasta, tomatoes, and cheese. How could you go wrong? Even when we’re not just considering stereotypes, there’s so much great stuff – pesto, prosciutto, balsamic vinegar, risotto…

Love polish food and cook some simple things at home, like perogies!

I think that the most ethnic food that I enjoy is food from England. I love to have Bangers and Mash with Peas. I have had this on many occasions and I LOVE IT!! YUMMY!! πŸ™‚

I love Indian food. I’ve made some curries and simple dishes like that, but not totally from scratch, I must admit. πŸ™‚

My favorite ethnic food is Armenian lamejeune, a flatbread topped with lamb (or other meats), vegetables and spices. It’s impossible to recreate at home, but so delicious!

I like enchiladas. I’ve made them once at home. I do want to make them again.

We eat Mexican food at least once a week, if not twice. I try out new recipes all the time and even make my own tortilla chips. YUM!

Me and my Hubby have traveled to Costa Rica many times. They make these killer sweet plantain that are baked in the oven. I have tried to make this recipe over and over again to get it perfect. I have even bought recipe book to see if they have it in there, but No such luck yet. I will not give up. But I can make a killer Arose Con Pollo, and black beans and rice.

I love Indian food. I’ve tried making some dishes at home, but it’s hit and miss for me. Plus, my hubby hates the smell of it, so he prefers if I just buy it, rather than cook it.

I actually made a close approximation of Malaysian Curry Chicken, but it was in smell only. I somehow couldn’t get the taste quite right

We love Mexican Pork Carnitas, and I’ve tried to make them at home with little success. I even bought lard! Just haven’t found the right recipe.

We love Pad Thai but I’m not brave enough to try it at home. I don’t think it would come out the same as our favorite Thai place.

Favorite ethnic food, that’s a toughy. I love Italian and make a mean lasagna. But I also love fish tacos with halibut, but they have to be done just right.
