Quick and Healthy Dinner for One
Hubby had to work late last night so I was on my own for dinner. We didn’t do our weekly meal planning and grocery shopping, so I had to throw some stuff together. I got inspiration from a recipe from Allrecipes.com. This was a great meal that literally took 5 minutes to make and kept me full all night. And it was really healthy!!
Goat Cheese / Pesto / SDT open face sandwich
2 pieces whole grain bread
1 oz Goat Cheese
~2 Tbsp pesto
Sun dried tomatoes
Preheat oven to 350. While oven is heating, assemble sandwiches.
Put a sheet of foil on a cookie sheet. Place bread on foil and spread cheese on bread. Spoon on pesto (as much or little as you like). Top with sun dried tomatoes.
Bake for 5 minutes until heated.
Quick steamed Squash
1 summer squash – cubed
1 tsp olive oil
seasoning of your choice – I used Mrs Dash chicken grilling seasoning
Put everything in a microwave bowl and heat for 60 seconds. Stir and heat 60 more seconds.
I have found taking pictures of soup to be more challenging but you make it look easy!
I agree – soup is hard to photograph. This soup was very thick and chunky. Our bowls are all navy blue so I didn’t want to use that, so I just used my square plate since it was white.
Inspired by your post, I made this yesterday. The texture was tough for me to deal with (I blended it with a food processor), but Scott liked it. Next time I might try it without the cinnamon (and without blending it), maybe make it a little less sweet. Thanks for sharing!
Sorry you didn’t like it 🙁 It is sweeter. Have you tried the other butternut squash soup in my blog. That one isn’t so sweet. And its very creamy.
