Pizza Night

Hubby and I like to have pizza night every couple weeks. We usually make two pizzas on Friday night and have the leftovers for lunch on Sat/Sun. We like different things on our pizzas so it works well.

This time, Hubby made a BBQ chicken pizza. It just had BBQ sauce, chicken, bacon, and cheddar cheese. I made a pesto chicken pizza. I used pesto as my sauce and added chicken, goat cheese, and sun dried tomatoes.

Both pizzas were quite tasty and were even better leftover (I love cold pizza). We used the canned dough this week because we had some in the house. I much prefer using Trader Joe’s pizza dough even though it is a bit more work. The whole wheat dough is great.

Yum, it looks fantastic. My DH loves AB, too. Guess I’ll be looking over my book again, it’s so big that sometimes I forget what recipes are in there. Thanks for the reminder. 😉

This does sound simple and delicious. I was watching an old episode of Barefoot Contessa and she showed how to butterfly a chicken and grill it. All these yummy butterlied chicken ideas coming my way. Maybe it’s a sign I should make it very soon 🙂

I have yet to butterfly a chicken but I really should try it – I hear it is great for grilling or pan roasting quickly too!
