Chicken sausage, spinach, mushroom pasta

Hubby decided to get a giant burrito for dinner. I wanted to be healthier, so I threw some stuff together for dinner. It was great!

Spinach / Mushroom / Chicken Sausage / Goat Cheese pasta – by ME!
Chicken sausage – 2 links
Sauteed Mushrooms
3 cup Spinach
3 oz Goat cheese
Angel hair pasta

Cook pasta as directed on box.

Brown chicken sausage in a skillet. Remove from skillet and saute mushrooms.

Add meat back to skillet as well as spinach and goat cheese. Cook until goat cheese melts and becomes creamy. Serve over pasta.

How nice of your husband to make these for you guys=) I’m glad you took down the spice and added zucchini. We’ve had a surplus around here and I can’t handle very spicy things. I might be trying this one out!

I never thought to add zucchini to black bean burgers, but agree that it would help them stay moist – I’ll be adding the spicy though! 😀

I’m always looking for new, tasty bean burger recipes! I bet the zucchini makes them stay super moist, which is great because many times bean burgers turn out dry…thanks for the recipe!
