Happy 100th Post to ME!

This is my 100th post and I wanted to squeeze it in because I will be having a few updates this weekend. I wanted to share some stats about my blog. I also want to thank everyone who reads my blog – it really makes my day (especially when you leave comments!)

My go-to recipes from this blog:

DinnerGnocchi with Shrimp, Asparagus, and Pesto or Cilantro Turkey Burgers– we make these a couple times a month. I like to make up 4 turkey patties and cook two that night and wrap the other two in plastic wrap and freeze them in a ziploc bag for a quick dinner later on.

CupcakesChocolate cupcakes with Chocolate cream cheese frosting – this combo is my all-time favorite, although I do love all my cupcakes!

CookiesJoelen’s chocolate chip cookies – you can’t go wrong with this recipe – they’re so soft and chewy

SidesHomemade applesauce and Sweet potato home fries – these recipes each get made about once a week. Everyone always asks for both of these recipes. The applesauce does take some time, but it’s definitely worth it in the end!

BreakfastBanana Blueberry muffins – these also get made a couple times a month. I usually make a double batch and freeze them in individual ziploc bags. Then we can each grab one on the way out the door for a quick healthy breakfast

I’ve really enjoyed blogging these past 8 months and plan to continue blogging. I have been slacking lately and I need to step it up in that department.

Some recipes to look forward to in the near future: Crockpot pulled pork, Summer salsa, and of course more cupcakes!

Also, hubby and I will be renovating our kitchen soon. Unfortunately, we will be without a working kitchen for about 8 weeks. That means 2 months without Daring Bakers challenges, Cupcakes Hero entries, and basically any other cooking/baking that I usually blog about. I’ll probably post some progress pictures as we go so you all can see how it’s going.

    Those cupcakes look delish! Can you tell me more about the “dipping in ganache” technique? Does the ganache need to be a certain consistency first?

    I have seen some maple cheesecake around the blogs, maybe that would be awesome use for the sugar? Or to top maple sugar cookies 🙂

    Carly – I dipped the cupcakes in the ganache while it was still very liquidy. I did it a few minutes after making the ganache and then let it set up on the cupcakes. Hope that helps.

    Lila, I get the liners online. Here is the link for the colored ones, and I also get brown liners as well.
