Spinach Quiche

Hubby has been traveling a lot for work recently. While he’s away, I like to make meals that hold up well to reheating the next couple of days. Enter this Spinach Quiche with ham and goat cheese. I baked this quiche Sunday night and have been enjoying leftover pieces every day since. Some days, I pack it in my lunch-bag and eat it for breakfast at work. Other days, I eat it for dinner with a mixed greens salad.

    HOW.AWESOME. I totally just found this via Google. I bought some pimento goat cheese from my favorite goat cheese farm here at the Nashville Farmer’s Market. And we were already planning on burgers tonight, so I thought it would be great on top. I googled to see what other condiments people added, and was like “Oh, Benton Baker, I know her!” Then I read the post, LOL!!! Once I read it I remembered. How funny that this was nearly 4 years ago to the day. 🙂
