Crockpot Chicken Tacos

Hubby got a new job (congrats Hubby!) and has been working a lot more to wrap up his old job and get the ball rolling with his new one. Because of that, I’ve been using the crockpot a lot more than usual. I’ve had this recipe saved for a while. Boy do we wish we had tried it before. The chicken is perfectly spiced and shreds apart so easily.

I served this chicken with some whole wheat tortillas, red onion, red bell peppers, and avocados.

Homemade Taco Seasoning – 2 1/2 Tbsp is equal to one packet from the store – from Sweet Life Kitchen
3 T. chili powder
1/2 tsp onion powder
1/2 tsp dried onion flakes
3/4 tsp garlic powder
3/4 tsp oregano
1 tsp crushed red pepper flakes
1/4 tsp cayenne pepper
1 tsp paprika
1 1/2 T. cumin
2-2 1/2 tsp kosher salt
1 T. black pepper

Mix it all together! The mix can be stored in an airtight container for up to a year!

Crockpot Chicken Tacos – from Sweet Life Kitchen
about 2 1/2 T. of the taco seasoning mix or 1 packet
15 oz LOW SODIUM chicken broth
1 14.5oz can diced tomatoes and liquid - I used Garlic and Onion diced tomatoes
4 boneless skinless chicken breasts - I used 2 chicken breasts and 3 pieces of thigh meat
Your favorite taco fixins

In a large bowl or measuring cup pour the chicken broth in, and use a fork to whisk in the taco seasoning mixture.

Spray the slow cooker with non-stick cooking spray.

Open the diced tomato can and pour all contents over the bottom of the slow cooker.

Lay the chicken breasts on top of the tomatoes and pour the broth/seasoning over that.

Cover and cook on LOW for 6 hours- chicken should fork apart easily.

Use a slotted spoon to remove the cooked chicken to a large bowl and use 2 forks to shred it up.

Use the slotted spoon to get all the diced tomatoes out of the slow cooker and add to the shredded chicken. Then grab a large cereal spoon and add about 4-6 spoon fulls of the liquid from the slow cooker to the shredded chicken bowl and stir it all up!

    Thanks for posting the taco seasoning recipe. My husband and I make tacos all the time and were always buying those silly packets. Turns out we have all of the spices we need in our cupboard already! Looking forward to trying it!

    Great idea. I tend to use the slow cooker more in cooler months, don’t know why, but I think I’ll try this – sure looks good.

    A lot of people say that Libby, but I would argue that it’s even better in the summer because it doesn’t heat up your kitchen to cook dinner. We use ours about once a week.

    This sounds really great! I am going to be using my crock pot a lot more as I get deeper into nursing school.

    Also, did you get your new lens? That first picture is really great :)
